29-Jul-2009 | Bill Lark of Lark Distillery in Hobart, has just returned from a month in Scotland consulting on a project that Scotland Newspaper The Sunday Herald has called the equivalent of selling sand to Saudi’s or ice to the Intuit – a proposed Scottish distillery has come to Tasmania for advice in whisky making!

In the Scottish town of Kings Barns, six miles south of St Andrews in the Kingdom of Fife, two men uncovered a tourist demand for a whisky distillery. After unsuccessfully researching throughout Scotland for advice on the set up of a small distillery, the two proponents, Greg Ramsey and Doug Clement, turned to internationally renowned whisky distiller Bill Lark.
The Lark Distillery has a proven recipe as a small scale distillery that can provide a unique and engaging visitor experience while still producing internationally award winning whisky.
Bill Lark jumped at the opportunity to be involved in the project and is now both consultant and share holder in the Kings Barns Distillery. Mr Lark will be working with engineers and architects over the next 18 – 24 months guiding the project through to completion.
So impressed are the Scott’s with the way whisky is produced at Lark Distillery, that they are having the two whisky stills for the new venture produced in Tasmania based on the design of the Lark Stills.
“The Scottish industry tends to think that making whisky is a big business and that distilleries have to be big. We think small can be better and can really involve people who are excited about hand-crafted whisky.”
“The distillery will be tourism-driven, while still making top quality whisky. We want to get people involved in every aspect of whisky making and play a role in producing whisky.”
